L'header è quello citato... è inviato tramite http, non col meta http-equiv...

Ora, dirai te... ok! Te lo consigliano pure li di dichiararlo "anche" nel documento...
... ma ciò che mi turba del validator è quando lo testo come html 5 ... in sto caso, pur dopo averlo dichiarato nel documento, identico all'header http, leggi un po' cosa mi scrive:
stavolta come error... e questo mi fa dubitare che il validator non mi legga affatto l'header http (che, ripeto, i browser e tutti i tool per gli header http, mi riconoscono).Internal encoding declaration iso-8859-1 disagrees with the actual encoding of the document (utf-8).
