Esiste un modo per sapere, nel caso in cui non si riesca ad inviare mail() con php, di sapere l'errore?

Credo proprio di no. Da l manuale:

Returns TRUE if the mail was successfully accepted for delivery, FALSE otherwise.

It is important to note that just because the mail was accepted for delivery, it does NOT mean the mail will actually reach the intended destination.

ergo non puoi sapere perchè l'email non è stata inviata ma solo se è stata inviata o meno.
